Homemade Nutter Butter Cookies
(I made a couple changes to the recipe only because it's what I had on hand. I did not use "butter flavored" crisco. They tasted amazing with the regular. AND, the filling I cut in half. It makes a TON. I had to put some down the drain even with the half that I did. Also, I used granulated sugar in that. It does make it a little gritty, but it was amazing. Would definitely be more smooth with powdered, but for some odd reason, I was out of it :( )
1 c butter flavored Crisco
1 c creamy peanut butter
1 c sugar
1 c packed brown sugar
1 t vanilla
3 eggs
3 c flour
2 t baking soda
1/2 t salt
1/3 c milk
Additional white sugar for rolling

Filling:
1 c creamy peanut butter
1/2 c butter, softened
4 c powdered sugar
2 t vanilla
6 Tbs milkCookies:
Preheat oven to 375 degrees.
Cream shortening, peanut butter, and sugars together until light and fluffy, 1-2 minutes. Add in vanilla, and eggs one at a time. In a separate bowl whisk together flour, baking soda, and salt and add to dough. Mix to combine. Add milk until dough is soft enough to roll into balls without crumbling.
Roll dough into 1/2 inch (or a little larger) balls, roll in sugar, place on ungreased cookie sheet and use a fork to make the design on top.
Bake for 6-8 minutes, or until puffy. You do not want them to be golden brown or overcooked.
Filling:
Beat peanut butter, butter, sugar, and vanilla together until smooth. Add milk until desired consistency is reached. When cookies are completely cooled, spread a layer of frosting on one side and sandwich together.

Oatmeal Crispies (The Pioneer Woman)
Ingredients
- 1 cup Shortening (Crisco)
- 1 cup Packed Brown Sugar
- 1 cup Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 1-½ cup All-purpose Flour
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 3 cups Quick Oats
- ½ cups Finely Chopped Pecans
Preparation Instructions
In a large mixing bowl, cream shortening with both sugars until well combined.
In a separate bowl, beat eggs together. Add vanilla and stir to combine. Add to the shortening/sugar mixture and mix well.
In a separate bowl combine the flour, salt and baking soda. Mix carefully into the egg/shortening mixture until well combined. Now add the quick oats and mix well again. Finally add the finely chopped pecans and mix well to combine.
Divide the dough in half and place each half of the dough onto a sheet of waxed paper. Roll the dough into a log and then wrap it tightly in the waxed paper. Now you can either chill or freeze the dough until later or you can go ahead and slice the dough evenly into cookie rounds.
When you are ready to bake them place them on a cookie sheet and bake at 350 degrees for 10 minutes until they are golden brown.
